So, what protocol are we using if I want to get involved in DMR in amateur radio in Perth ?
Are they P25 or MOTOTRBO ?

Mototrbo is just Motorola's proprietary version of DMR
P25 is not the same as DMR (do a search on the net for the background information)
So to answer your question the protocol is DMR
